Crispy and simple pierogi

This food is genius and I make it quite often. You can use almost any leftovers for the filling. I mostly use some  spreads, rice dishes, mashed potatoes, mushrooms etc. So it is super cheap and you can use your leftovers and get a whole new VERY tasty dish. You can also boil the stuffed pierogi but if you want them crispy then cook them in hot oil (no need to pre-boil then). And all you need for the dough is flour and water! Cannot get any easier :)

You get about 32 large pierogi from this recipe (you can freeze the leftover pierogi)

  • 3 cups all-purpose flour
  • 1 cup boiling water

Take a bowl and mix the flour with boiling water until it forms a soft dough. Take the dough ball out of the bowl and knead it well on a floured surface. Cover the ball with a clean towel and let it rest for about 30 minutes. Then take a little bit of dough, form a little ball, roll it into a circle, add about 1 teaspoon of filling, pinch the edges together with your fingers and then use a fork to close them. Boil the fresh pierogi or fry in a plenty of hot oil until they are crispy and golden brown. Serve with a fresh salad and your favorite dressing.
