Juicy pasta salad with sun-dried tomato pesto


The weather in Estonia is almost extreme right now. We just got out of a really cold and snowy winter and now we have +30 C outside. Cooking on a hot stove isn't really tempting right now so this juicy and fresh pasta salad is just perfect!




4-6 people


Salad:
  • 250 g dried pasta (farfalle for example)
  • 1 middle-sized cucumber
  • little head of iceberg lettuce
  • handful of cherry tomatoes
  • little can of pitted olives
  • 2-3 tbsp of marinated pearl onions
Pesto:
  • 5-6 gloves of garlic (can use more or less)
  • half a can of sun-dried tomatoes in oil (about 10 tomato pieces)
  • 3 tbsp sun-dried tomato oil
  • 3 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • some dried or fresh dill
  • a pinch of ground black pepper

Boil the pasta in salted water until al dente. Drain and rinse with cold water. Take a bigger bowl and add cucumber strips, chopped iceberg lettuce, cherry tomatoes (cut in half), olives and marinated pearl onions. Add drained and rinsed pasta.
Make the pesto: blend all the ingredients until smooth (I used a hand blender). Add pesto to the salad and mix. Serve right away. I also added some vegan mayo while serving. It is perfect when served with some lime infused sparkling water on a hot summer day or night :)
