Sweet potato and rice noodle soup with broccoli and white beans


I always have mixed feelings about the winter season. I'm not a fan of the lack of daylight, but I do love all these cozy indoor activities. Like:

playing video games (I finished Fallout 4 and now it's back to Civilization 5)
doing yoga at home
cooking delicious vegan food
rehearsing with the band
putting up Christmas lights in our forest cabin
heating the rocket stove
watching our favorite series in our comfy log bed
sauna nights with friends
working on great projects
thinking about new year and life in general
eating comforting soups, like this sweet potato soup!

Yes, let's get back to this super simple and satisfying soup, that always hits the spot. I adore broccoli, sweet potatoes, rice noodles and beans. It was a great decision to put them all together. The soup has a mildly sweet broth from the sweet potato and heartiness from the beans. I also added a tiny bit of crushed tomatoes to balance the sweetness and of course, lots of tender broccoli and lovely rice noodles. I feel that I might make this soup as often as my all time favorite - easy vegetable and dumpling soup. And if you are avoiding gluten, then this soup has none. Preparation time: 20 minutes

Serves: 4 people

Ingredients:

  • 2 Tbsp oil
  • 1 medium onion
  • ½ tsp ground black pepper
  • 2 large garlic cloves
  • 3 cups / 350 g cubed sweet potato (about half of a bigger sweet potato)
  • 2 bay leaves
  • 7 cups / 1600 ml boiling water
  • 2 ½ cup / 170 g broccoli
  • 2 ½ oz / 70 g rice noodles (break them smaller)
  • 14 oz / 400 g canned white beans or other canned beans
  • 3 heaping Tbsp crushed tomatoes (I used canned)
  • 2 tsp salt
  • 1 Tbsp soy sauce or tamari

Directions:

Heat up a thick-bottomed pot. Add oil, chopped onions, ground black pepper and a pinch of salt. Cook for a couple of minutes. Add chopped garlic cloves, cubed sweet potato and bay leaves. Stir and cook for a minute or two. Add boiling water. Cover the pot with a lid and let it boil for about 10 minutes, until the sweet potato is soft. Add chopped broccoli florets, rice noodles, drained and rinsed white beans, crushed tomatoes, salt and soy sauce or tamari. Stir and cook, until the noodles are soft. Enjoy!

Tip: If you can't find sweet potato, use turnip or carrots instead.
