Tomato and mushroom rice

It is a really satisfying dish. You can use other mushrooms instead of the white ones. Also, you can replace the tomato juice with fresh ripe tomatoes. Either way, it will be a really nice dinner. Happy cooking!



serves 4 people

Preparation time: 30 minutes.
  • 3-4 Tbsp oil
  • 2 big onions
  • 3-4 celery ribs
  • about 5-7 white mushrooms or other edible mushrooms
  • about 1 cup / 9 oz / 250 g rice
  • 1-1 ½ tsp salt
  • little bit of ground black pepper
  • ½ l tomato juice
  • (soy sauce to taste)

Heat up some oil in a thick-bottomed pot or wok pan. Add chopped onions and cook until slightly golden brown. Add chopped celery, cook for about a minute and then add chopped mushrooms. Stir and add rice, salt and pepper. Now pour enough water on it so there would be a few centimeters water above the rice. Simmer until the rice is almost soft. Add tomato juice and stir. Simmer, until the rice is completely soft. Taste and add some salt or soy sauce if needed.
