Beet and sauerkraut salad


My sister Hedvig is the biggest fan of this beet salad (we call it "vinegrett")! She lives and works in Norway and every time when she comes to Estonia, she buys this salad from the first grocery store. I really wanted to make this kind of salad at home and it turned out so much better than the store-bought. And sauerkraut is very good for your belly's microflora and digestion so eat with joy :)





4-6 people

  • 500 g sauerkraut
  • 5 boiled beets
  • 400 g canned kidney beans
  • about 12 sun-dried tomato halves in oil
  • 3 tbsp of oil from the sun-dried tomatoes
  • 3 tsp (brown) sugar
  • some salt to taste

Mix the sauerkraut with beet cubes, drained and rinsed kidney beans, chopped sun-dried tomatoes, oil, sugar, salt and serve.
