Chocolate cake with a hint of lemon


This cake was one of the first vegan cakes I made and really liked. This recipe is pretty old and it still works for me. It's a delicious cake with a little bit of tangy lemony hint. A really perfect dessert for a summer party!




  • 7 dl all purpose flour
  • 2 tsp baking powder
  • 3 tsp vanilla sugar
  • 6 tbsp cocoa powder
  • 4 tbsp brown sugar
  • 4 dl cold water
  • 1 tsp vinegar
  • 100 g vegan margarine
  • a juice of half a lemon
  • some powdered sugar
  • 200 g dark vegan chocolate

Preheat the oven to 200 C. Mix the flour, baking powder, vanilla sugar, cocoa powder and brown sugar. Add water, vinegar and melted margarine. Stir until the batter is smooth. Grease the cake pan and pour in the batter. Bake the cake for 35-45 minutes at 200 C. In the meantime prepare the glazes: for the lemon glaze, squeeze the juice out of the lemon and mix it with some powdered sugar, until you get a cream-like texture. For the chocolate glaze, melt the chocolate in a water bath. When the cake is baked, glaze the cake with lemon glaze first and then with chocolate glaze. You can decorate the cake with some grated lemon peels, fresh strawberries and lemon balm or peppermint leaves.
