15 delicious vegan recipes for beginners


I've been planning to write this post for a very long time now. I often receive letters from people who ask me what should they eat now that they've become vegan. In addition to that, I've seen that a lot of people don't have much experience in the kitchen. So if you are a beginner vegan and a beginner cook, it may all seem so difficult and hard. But hey, it isn't! I will lend a helping hand.

I made a little round-up of my favorite easy vegan recipes. They are suitable for beginner vegans and also beginner cooks. All the recipes here are super easy and delicious. To be honest, most of my recipes are rather easy to make, but this selection is based on your previous comments and taste. I also thought about the recipes that helped me in the beginning. 1) Lentil and turnip soup with lemon. Super easy, filling and delicious! Turnip (or rutabaga) goes unbelievably well with lemon.


2) Rich and juicy pasta salad with veggies. This time no mayo sauce. Only mild and luscious mustard sauce and tons of fresh veggies and other good stuff.


3) Our family favorite potato salad. An absolutely authentic and unwordly tasty vegan version of a classic potato salad.


4) Crispy carrot cutlets. Pretty sure they are one of the easiest vegan cutlets out there. You can experiment with different herbs and spices here.


5) Crispy sesame and garlic potatoes. I love potatoes and this is one of the tastiest ways to consume pan-fried potatoes.


6) Easy tomato cream sauce. It's so funny to think that I almost didn't post this recipe because I thought it was too easy! Now I hear from here and there that people really love this creamy sauce and it has become a favorite in quite a few households.


7) Quick and easy vegan noodle stir-fry. Craving Chinese food? It can't get any easier when you have this recipe.


8) Tomato and chickpea curry with coconut milk. If you want a foolproof curry recipe that is also crowd-pleasing, try this tomato and chickpea curry.


9) Lentil stroganoff. It was one of the first recipes I created when I became vegan. Just throw everything into a pot and simmer away. It's oil-free, too!


10) Eggplant and potatoes on tomato sauce. Again, one ancient recipe that is still relevant. A great way to use up your leftover boiled potatoes and that eggplant staring at you every time you open your fridge.


11) Quick Bolognese. If you are just beginning your vegan journey and discovering meat alternatives, this vegan soy Bolognese is a no-brainer. 


12) Simple rice and veggies with peanut and tomato sauce. An easy recipe with a long name. For the peanut and tomato sauce you only need four ingredients and it's ready in under a minute!


13) Avocado hummus. Why not to try a slightly more interesting version of a classic hummus?


14) Simple lentil and onion sandwich spread. If you only pick one recipe from here, try this one. It's the most universal recipe ever. Super delicious and filling, too. You can spread it on a bread or serve it with rice, potatoes or pasta. It's also a nice meal to grab on the go.


15) Easy raspberry muffins. You can experiment with different berries or even apples in this recipe.
